A traditional fresh, chilled Cumberland sausage with visible particles of meat and herb and seasoning flecks throughout. The sausage will be of a smoother texture, free from off odours and taints with a well-balanced flavour and no metallic aftertaste. The sausage will have a minimum meat content of 75% and an anticipated cook loss of 15%.
