    Lamb Dinner Recipe

    Easter is just around the corner. It is a great time of the year - spring is here, weather is getting warmer and more people are going out to take a break from their routine. Why not treat your customers to delicious Easter flavours? Our Lamb Dinner recipe, which uses our very own mouth watering CJ Butchers lamb chops, has a lovely zesty fresh taste and is perfect for Spring.

    Recipe:

    1. Place lamb loin chops, 4 tablespoons of olive oil, garlic cloves, mint, lemon zest and 2 lemons cut into quarters, salt & pepper in a bowl and mix well so the meat is coated. Cover and leave to marinate for at least 30 mins.

    2. Preheat the oven to 200 C/180 C fan/Gas 6.

    3. Parboil new potatoes for 5 mins. Drain and leave to steam dry.

    4. Heat 1 tablespoon of oil in a pan and add the marinated chops. Brown for 1 min on each side.

    5. Place chops into a large baking tray and tip in the remains of the marinade, including the lemon quarters and garlic cloves. Add the potatoes and drizzle everything with a good glug of olive oil. Cook in the oven for 10 mins or 15 mins if you prefer your lamb more well-done.

    6. Fill a large serving dish with fresh salad (watercress and rocket work really well) and tip the contents of the baking tray on top of the leaves, including all the lovely juices. Sprinkle with fresh mint and pomegranate seeds. A simple yoghurt and caesar dressing is a nice finishing touch.
