    Lohikeitto Fish Soup

    As good Friday approaches, you may be looking for a fish dish to add to your specials board. Fish holds a long-standing tradition on Good Friday as a symbolic alternative to meat so why not treat your customers to the perfect Scandinavian salmon dish, Lohikeitto Fish Soup. Originating in Finland, this warming soup has three main elements, flaky salmon, hearty potatoes, and indulgent cream.

    How to create this dish (6 servings):

    1.     Start by bringing the stock to boil.
    2.     Add the diced potaotes and cook for around 15 minutes until soft.
    3.     Stir in the chopped carrot, onion and coriander and cook for a further 5 minutes.
    4.     Next, add the salmon, salt and pepper and cook until the salmon is cooked through.
    5.     Reduce the heat to a simmer and add the cream. Allow to simmer for 5 minutes.
    6.     Adjust seasoning to taste then serve.

     

    Ingredients:

    Fish or Vegetable stock.
    Large potatoes, chopped into medium sized chunks. 
    Finely chopped Onions
    Chopped carrots 
    Salmon fillets
    Double cream 
    Ground corriander 
    Chopped dill 
    Salt and black pepper to taste.
