Coronation Trifle with Lemon Cake and Berries

For a royal celebration, nothing beats a classic British dessert, and this trifle is no exception. It's nostalgic, deliciously sweet and best of all, easy to make!  

The sweet lemon sponge and fruit make it the perfect dessert for any Coronation Menu. Simply layer the lemon sponge cake, pour over the lemon syrup and layer the fruit and whipped cream. Finally garnish with more fruit and some mint.

 Method


 

    • Make a lemon syrup by heating a cup of water in a pan and adding the juice of one lemon and 4 heaped tablespoons of icing sugar. Stir until dissolved, then leave to cool.
    • Place a generous slice of lemon cake in the bottom of a tall glass or jar and add a generous glug of the lemon syrup. Then pile on as many different types of berries as you like (we used strawberries, blueberries and raspberries) and a generous swirl of double cream on top. Finish with more berries and a sprig of mint.
