Delicate in texture with a rich, distinctive flavour, calves liver is prized for its tenderness and fine grain. Younger than traditional beef liver, it has a milder, more refined character while still offering the depth and richness expected from a classic offal cut.

Supplied whole at approximately 4–5kg, it gives chefs the flexibility to trim and portion as required. Sliced and cooked quickly over a high heat, it is best kept slightly pink in the centre to preserve its delicate texture and flavour.
