There’s a real rustic quality to this traditional pork sausagemeat, with a firm, coarse texture, visible pieces of meat and delicate flecks of herbs and seasoning throughout. Made with a minimum of 65% pork, it has a well-balanced savoury flavour that gives dishes plenty of character while allowing the meat to remain at the centre.

Supplied as a 5kg case weight, it’s a practical format for chefs producing larger volumes, with the flexibility to shape and season as required. Use it for handmade sausages, sausage rolls, stuffing, Scotch eggs and other classic preparations, with an anticipated cook loss of no more than 15% for a satisfying, meaty finish.
