The coarse texture, generous pieces of meat and flecks of seasoning throughout give it a rustic, substantial character, while the rich savoury flavour allows the quality of the pork to come through. It’s the kind of sausage meat that brings the character of a traditional butcher’s recipe to the kitchen.
