Nurtured in Norfolk was founded in 2008 by former chefs Allan and Sue, who began growing micro cress in their garden after searching for more consistent, flavourful garnishes for their own dishes. Their experience in professional kitchens gave them an understanding of what chefs need, and after growing demand from local wholesalers, they turned their passion into a business. Today, Nurtured in Norfolk produces over 280 varieties of micro herbs, edible flowers, leaves, pea shoots, baby and sea vegetables, all grown with the same focus on quality and consistency they would expect in their own kitchens.
Sea Fennel is best lightly cooked and blanched to preserve its salty flavour and crisp texture, and can also be boiled or steamed like asparagus. It pairs beautifully with fish, shellfish, pork, capers, lemon, olives and broad beans, while the fresh leaves can be used in salads or as a distinctive garnish for cocktails and mocktails.
