Tosazu means “vinegar from Tosa” – located in Shikoku (the region of Tosa, the actual region of Kochi) known for its excellent bonito. Reflecting its heritage Tosazu is a vinegar-based seasoning made primarily with dashi, a Japanese broth crafted from bonito flakes and kombu seaweed. Blended with soy sauce and mirin, Tosazu stands out for its rich umami flavour and unique aroma. Making it the perfect addition to dressings, marinades, and traditional Japanese dishes.
