Ingredients
200 g Chicken Breast (BC2799)
1 tsp Olive Oil (A202112)
1 tsp Garlic Powder (A40662)
1 tsp Smoked Paprika (A42025)
1 piece Little Gem (V1289)
100 g Tenderstem Broccoli (V2118)
25 g Shaved Parmesan (Z3299)
30 g Sourdough (for the croutons) (36502)
2 piece Streaky Bacon (z7101)
1 piece Eggs (Z838)
50 g Broccoli (V1866)
1 ml Caesar Dressing (20178)
Instructions
Step 1: Rub the chicken breast with the olive oil, garlic powder, smoked paprika, salt and pepper.
Step 2: Heat a griddle pan over a medium-high heat and cook the chicken for 6–7 minutes on each side, or until cooked through. Rest for 5 minutes before slicing.
Step 3: Bring a pan of salted water to the boil and blanch the Tenderstem and broccoli florets for 2 minutes. Drain well.
Step 4: Heat a griddle or frying pan until very hot and cook the broccoli for 2–3 minutes until lightly charred, turning occasionally.
Step 5: Place the baby gem in a large bowl and toss with most of the Caesar dressing.
Step 6: Roughly chop the bread into crouton-sized pieces, drizzle with olive oil and put into a preheated oven until golden brown.
Step 7: Transfer the Caesar-coated lettuce to a serving plate and top with the charred broccoli, sliced chicken, croutons, crispy bacon (if using) and the soft-boiled egg.
Step 8: Finish with the shaved Parmesan, chopped chives and drizzle over the remaining dressing.
