Instructions

  • Step 1: Rub the chicken breast with the olive oil, garlic powder, smoked paprika, salt and pepper.

  • Step 2: Heat a griddle pan over a medium-high heat and cook the chicken for 6–7 minutes on each side, or until cooked through. Rest for 5 minutes before slicing.

  • Step 3: Bring a pan of salted water to the boil and blanch the Tenderstem and broccoli florets for 2 minutes. Drain well.

  • Step 4: Heat a griddle or frying pan until very hot and cook the broccoli for 2–3 minutes until lightly charred, turning occasionally.

  • Step 5: Place the baby gem in a large bowl and toss with most of the Caesar dressing.

  • Step 6: Roughly chop the bread into crouton-sized pieces, drizzle with olive oil and put into a preheated oven until golden brown.

  • Step 7: Transfer the Caesar-coated lettuce to a serving plate and top with the charred broccoli, sliced chicken, croutons, crispy bacon (if using) and the soft-boiled egg.

  • Step 8: Finish with the shaved Parmesan, chopped chives and drizzle over the remaining dressing.
