  • Step 1: Cook the Fries Preheat your oven or air fryer according to the shoestring fries package instructions. Cook the fries until golden and crisp. While still hot, toss with: Dried oregano Fresh chopped oregano A pinch of salt Set aside and keep warm.

  • Step 2: Cook the Chicken Gyros Cook the chicken gyros according to the package instructions until cooked through and lightly charred at the edges. Slice into bite-sized strips if required.

  • Step 3: Prepare the Salad Dice the tomato. Thinly slice the red onion. Mix together in a bowl with most of the fresh oregano, reserving a little for garnish.

  • Step 4: Warm the Flatbreads Heat a dry frying pan over medium heat. Warm each flatbread for 20–30 seconds per side until soft and pliable.

  • Step 5: Assemble the Gyros Spread 2 tablespoons of tzatziki down the centre of each flatbread. Add a generous portion of chicken gyros. Top with the tomato and red onion mixture. Add a handful of oregano fries inside the wrap for an authentic street-food style gyro. Sprinkle with the remaining fresh oregano.

  • Step 6: Roll and Serve Fold in the bottom edge of the flatbread. Roll tightly into a wrap. Wrap the lower half in parchment paper or foil if desired. Serve immediately with the remaining oregano fries and extra tzatziki on the side.

  • Step 7: Optional Takeaway-Style Finish. For a more authentic Greek flavour, add a small extra sprinkle of dried oregano over the finished gyros just before serving. This gives the wrap the classic aroma found in Greek street-food gyros.
